Recipe for YUMMY black bean SOUP! original post 11/14/08

I keep telling people about this recipe so I guess I had better share it...


1C diced onions
1/2 cup diced celery & carrot
1/2 cup beef broth
(2) 15oz cans of black beans
8oz tomato sauce
1/4 teaspoon cumin
1/2 teaspoon cayenne
2 pieces of cooked center cut bacon, diced
salt to taste
Fat free sour cream as garnish, optional

Put cooked bacon pieces, onion, celery, carrot & beef broth in large glass dish & microwave for 3 minutes on high to soften vegetables.
Using blender, blend 1 can beans with the veggie/bacon mixture. Transfer to saucepan. Blend 1/2 of second can and pour with remaining beans into saucepan. Add tomato sauce and spices. Add salt to taste & heat through. Garnish with a drizzle of fat free sour cream. Enjoy!

totals 6 servings and has Weight Watchers point value of 3 pts per serving.
