MAN that was an AMAZING meal. If I may say so, myself.

I wanted something YUMMY to eat for dinner tonight so I Google'd "the best weight watchers dinner recipes" and I found this website called Gina's Weight Watchers Recipes. I have emailed myself several of her recipes that I will use soon but here's what I made for dinner tonight:

Pork Chops with Dijon Herb Sauce

These pork chops were DE-LICIOUS. I followed the directions to a "t" and even Lauren (six years old & loves to tell me the things I make are "disgusting") said the pork chops were amazing.

This means she gets to live in our home another night!

I served the meat with some fresh green beans that were sauteed with olive oil & covered in lemon pepper and added a small piece of sour dough bread on the side.


And for dessert I made the Black Bean Brownies. I had to give this one a try. Could I fool my family and make a dessert that had GROUND UP BLACK BEANS in it? I can tell you that the two year old is not the sharpest stick in the box but could I fool Dr. Hempel? YES!!! These brownies came out dense & fudgy~ such a decadent treat! I topped them with a squirt of low fat whipped cream and dusted them with nutmeg to distract my test subjects. The healthy fools scarffed them down!


I enjoy preparing and eating nutritious foods however I get a little tired of consuming chicken and lettuce. I'm definitely going to go back & see what else I can find on my favorite new blog. That dinner looks so yummy! I'll have to do the pork chops and beans sometime! Delish! Oh and I've done the brownies with black beans and never had one complaint! You couldn't even tell that the beans were there! ;o) LOVE EM!

I am so glad you liked them! My husband is picky about pork chops but absolutely loves these!! They come out so juicy. It's been a while since I made them, I think I'll make them again this week :)

Food Network's Ellie Krieger has some healthy recipes. Her show is Healthy Appetite w/ Ellie - http://www.foodnetwork.com/ellie-krieger/recipes/index.html anyway she's got some decent recipes (also gives the nutritional content). Pork Chops looked tasty - black bean brownies? I'll have to try 'em.
